Avocado, Cilantro, Lime Dressing


Salad dressings are one of those things that taste ooooohhhhh so good but usually it is the ones that taste the best that are the worst for you!  The best part of this dressing is that you know exactly what you are putting into your body because you are making it yourself.  It's thick and creamy, but that creaminess comes from the avocado which is a good kind of fat to eat.  This is such a yummy dressing, you'll want to put it on everything!  It's great to put on a salad, dip veggies in, or even put in a burrito!










[What you Need]

1 bunch cilantro
1 large avocado
2 limes
4-5 cloves garlic
1 jalapeno
olive oil
salt and pepper to taste

[What to do]

Tear the cilantro leaves off the stems and put them in the food processor.  Next, add the juice from 2 limes and throw in the garlic as well.  Remove the stem and seeds from the jalapeno and add it into the food processor. Turn the food processor on to combine all the ingredients. Add the avocado and then blend it all up. While the food processor is on, drizzle in olive oil until the dressing is the consistency that you like.  Season with salt and pepper.  Enjoy!
