MMMmmmmmm, cupcakes! Ok, so I am a total sucker for a cupcake. Well not just any cupcake, a FUNFETTI cupcake! (as if there is any other kind). I got these super cute cupcake liners with hearts all over them for Valentine's Day from none other than the DOLLAR STORE! What a steal is that?!? I saw them and I just HAD to have them. I knew I just had to make some Funfetti cupcakes because those are obviously the best kind of cupcake there is, and a buttercream frosting to top them with. And sprinkles, you can't forget the sprinkles.
Funfetti cake mix (and the ingredients to make it)
For the frosting:
4 1/2 sticks unsalted butter (room temperature)
7 cups powdered sugar
2 tablespoons water
[What to do]
Make the cupcakes according to the packaging.
For the frosting, add the butter and 3/4 cup of the powdered sugar to a stand mixer and beat until well incorporated. Then on a slow to medium speed, slowly add in the rest of the sugar until its completely incorporated. On a medium speed, add in the water, and a little extra until you get the consistency you like. When you're done you can add food coloring of your choice and pipe it onto your cupcakes.
Top with some sprinkles and eat your heart out!
