The BEST Baked Beans (with bacon!)


The 4th of July is only a few days away which means BBQs and parties and the best part, lots of good food!  These baked beans are my favorite baked beans and they are pretty easy to make.  They will definitely be a hit at any 4th of July BBQ.  Grill up some burgers and corn on the cob and you have got yourself the perfect patriotic party!










[What you need]

1 onion
1 jalapeno
10 stripes thick cut bacon
3 cans pork and beans
3/4 cup bbq sauce
1/4 cup brown sugar
1/4 cup apple cider vinegar
salt and pepper

[What to do]

Preheat your oven to 300.  Dice up your onion and then finely dice you jalapeno and set them aside.  Cut your bacon into 4 pieces.  In a large sauce pan, halfway cook your bacon.  You may have to do it in 2 batches.  The point of this is render off some of the fat, not to cook the bacon.  You want it to still be pretty uncooked and not crispy at all.  When you have partly cooked your bacon and rendered off some of the fat, set the bacon pieces aside, leaving the bacon fat in the pan.  

Add you diced onion and jalapeno to the bacon grease and saute it over medium heat about 5 minutes or until the onion is tender.  Add in your 3 cans of plain old pork and beans and stir it all up.  Add in the bbq sauce, brown sugar, and apple cider vinegar and mix everything to combine.  Generously season with salt and pepper.  Bring it to a simmer and let it all simmer for about 3-5 minutes, stirring occasionally.  

Next pour everything into a 13x9 in glass baking sheet.  Lay the pieces of bacon on top of the beans to cover the top.  Put them in the oven and bake for an hour and 45 minutes.  If the bacon starts to sink, that is ok.  Next stir it all up and then pull some of the bigger bacon pieces to the top.  Put it back in the oven and broil it for about 15 minutes to get some of the bacon crunchy and to get the beans to caramelize some.  Stir up the beans and serve!
