Brussel Sprout and Bacon Salad with an Orange Vinaigrette

I think by now everyone knows I have a love affair with brussel sprouts.  They are so good!  But one thing I haven't done is prepare them raw.  I have grilled them and roasted them and sauteed them so I figured it was time to figure out a way to eat them raw.

Sriracha BBQ Chicken Skewers with Bacon and Onion

Grilling is one of our favorite things.  And we just recently got a grill since we moved up to the Bay Area so naturally chicken skewers were on the top of our list of first things to grill!.  As you know I am a fan of the easy cooking and this recipe is definitely one of them.  Trader Joes has this Roasted Garlic Sriracha BBQ sauce that we LOVE.  We marinated the chicken in it (and also added some extra Sriracha for that extra little kick!) and it turned out just oh-so-delicious

Creamy California Pasta Salad

Ok, ok, ok, I know this is totally a summer recipe and Starbucks has already come out with their Pumpkin Spiced Latte which means its "fall" but here in Southern California we have a (surprisingly) hot week with temperatures being 90+ (unheard of in coastal San Diego).  So with this heat wave I decided I can still make "summer" dinners even though it is September.  And with that, I give you my Creamy California Pasta Salad.  It's even better if you eat it on the beach!  It has to be like the easiest dinner there is, and the best part is, you can make it early and then eat it whenever you want!  And the leftovers the next day are just delish!

Guacamole Bacon Chicken "Burger"

I am not a huge fan of ground meat in general so I am always looking for a way to update my "burger" to something that doesn't use ground meat.  Behold: the Guacamole, Bacon Chicken "Burger".  Ok so it's more a sandwich than a burger because it uses a grilled chicken breast, but since it's Labor Day Weekend, a weekend full of BBQs, I'm just going to call it a burger anyway.

The BEST Baked Beans (with bacon!)

The 4th of July is only a few days away which means BBQs and parties and the best part, lots of good food!  These baked beans are my favorite baked beans and they are pretty easy to make.  They will definitely be a hit at any 4th of July BBQ.  Grill up some burgers and corn on the cob and you have got yourself the perfect patriotic party!

BLT Sandwich with a twist! Bacon, Tomato, Avocado, Spinach and Ranch!

It's no secret that I am in love with bacon.  I would eat it with every meal if I could!  And so naturally, I'm a huge fan of a good old BLT sandwich.  I like to fancy mine up by adding some avocado into the mix and trading out mayonnaise for ranch dressing and lettuce for spinach!  Trust me, give it a try, you'll never look at a BLT sandwich the same again!

Bacon Wrapped Asparagus Bundles

Bacon and Asparagus go hand in hand like peanut butter and jelly in my book!  These Bacon Wrapped Asparagus Bundles are probably one of my new favorite foods because they are super easy to make and you only need 2 ingredients, bacon and asparagus!  They're are like little lollipops of savory yumminess!

Super Bowl Snacks: Parmesan Potato Skins

We are gearing up for the Super Bowl tomorrow and our favorite part of the game is the SNACKS! Duh! Followed by the commercials in a close second, and the actual game comes in third.  One of the best Super Bowl snacks and one of our favorites is potato skins, and these ones are oooooohhhhhh so yummy!  With a little twist from the traditional potato skins, we swap cheddar cheese for parmesan and sour cream for ranch and PRESTO! We have these delicious, crispy, bacony, potato skins.  They are sure to be a favorite with all the guys watching the big game tomorrow!

Bacon Asparagus Risotto

Risotto is one of those dishes that always looks so good in restaurants, but I always thought it was really had to make perfectly.  Well this risotto with bacon and asparagus in it is so delicious and fairly simple to make!  It definitely is a little time consuming, so if you are looking for a quick 20 minute minute dinner, this is not it.  But sometimes you just want something so decedent and delicious, and this risotto is perfect for that! I mean it has BACON in it, how can it not be good?
