Wingfest: A Tasting of our Favorite Wings, Hot Sauces, and BBQ Sauces


So recently the Mr has been obsessed with a YouTube show called First We Feast: Hot Ones.  Basically it is a talk show where a celebrity is getting interviewed and while they are answering questions, they are eating chicken wings that are in hot sauces that are continually getting hotter.  Well that has since lead to a massive variety of hot sauces and BBQ sauces that currently reside in our fridge.  And from that, WINGFEST was born.

Hello summer!  Which you know what that means, it's grilling season!  And may I say, I'm pretty sure this is my favorite season (not that it really matters what time of year, we are always grilling).  And what is right around the corner, the 4th of July!  Only like the best grilling holiday of them all!

Chicken Caesar Lettuce Cups


I know, you guys are probably sick of all these lettuce cup recipes I have been posting but seriously, what could be better?  They are all super quick to make, healthy, delicious, and how much fun is it to eat your dinner with your hands?! haha (ok so maybe that's just me)

Buffalo Chicken Lettuce Cups


Well I am back at it again! On that lettuce cup kick that is.  My latest version?  Buffalo Chicken Lettuce Cups!  I have always had a thing for buffalo chicken so it was only natural that I come up with a healthier way to eat it (i.e. not crispy chicken wings slathered in sauce).  I feel like you can't go wrong with avocado, ranch, tomato and buffalo chicken.

Spicy Chili Lime Chicken


It's summer time and that means we are grilling all the time!  Who are we kidding, we live in California and grill year round!  We made these spicy (and I mean SPICY) Chili Lime Chicken Skewers the other night and they were oh-so-delicious.  I am a fan of all things spicy and this marinade gave me a run for my money as far as spice goes.  But with that said, it was delicious! Just don't say I didn't warn you.

Chicken Fajita Lettuce Cups


If you haven't noticed, I am kinda on a lettuce cup kick lately.  I am totally loving all the different ways to make them and they are all so delicious and way healthier than using tortillas or something like that.  And they are so quick and easy to make, you can't beat a delicious dinner on the table in about 20 minutes flat.  My latest ones, Chicken Fajita Lettuce Cups!  I love me some mexican food but it is packed full of carbs, but with these chicken fajita lettuce cups you get all the flavor and deliciousness of mexican food but without the carbs!

Asian Chicken Lettuce Cups


I have been trying to figure out healthy, quick weeknight dinners to make.  I have always been a fan of lettuce cups as a healthier alternative to things like tortillas.  I wanted to give these chicken cups a little asian flavor but without all the carbs and sugars typically found the sauces and dressings.

Sweet and Spicy Ginger Wings


Oh of all things delicious!  We have been making wings at home for a while now and have always done them in the oven.  But these babies were cooked on the grill and I can confidently say we will never go back to cooking them any other way!  

Mexican Chicken and Rice Soup


So growing up in San Diego I have had more than my fair share of delicious mexican food.  One of my favorites was this Mexican Chicken and Rice Soup from Jorge's Mexican Food in Encinitas.  Whenever it gets chilly I always crave it.  But now that we are living in the Bay Area, we can't exactly hop in the car to go get a bowl of it, so I went out to make my own.

Chicken Enchilada Zucchini Boats


Ok, I am first to admit, I was hesitant about this.  How could enchiladas taste like enchiladas without any tortillas and with a bunch of zucchini?!  I really thought this was going to be one of those Pinterest fails where I ended up crying for ruining dinner and end up ordering pizza! haha But this one turned out AMAZING.  I highly recommend this as a low carb version of Chicken Enchiladas!

Sriracha BBQ Chicken Skewers with Bacon and Onion


Grilling is one of our favorite things.  And we just recently got a grill since we moved up to the Bay Area so naturally chicken skewers were on the top of our list of first things to grill!.  As you know I am a fan of the easy cooking and this recipe is definitely one of them.  Trader Joes has this Roasted Garlic Sriracha BBQ sauce that we LOVE.  We marinated the chicken in it (and also added some extra Sriracha for that extra little kick!) and it turned out just oh-so-delicious

Pesto Chicken Sandwich


I am always looking for some ways to mix up what I make for B to take with him to work, and this Pesto Chicken Sandwich was definitely a show stopper!  It was pretty simple to make, you just throw all the pesto ingredients and the chicken into the food processor and voila! I added on some arugula because lets be honest, arugula makes everything better!  Some slices of mozzarella and tomato all piled onto a baguette and it made for one fancy sandwich!

Lemon Orzo Chicken Noodle Soup!


The gloomy weather has made me crave a delicious Chicken Noodle Soup!  I looooooove the Lemon and Garlic Grilled Chicken we make so I decided to see if I could make it into a soup form!  And ever since the Spinach and Parmesan Orzo we made, I have been dying to bring orzo into more dishes so out came this oh-so-delicious Lemon Orzo Chicken Noodle Soup!

Grilled Lemon Garlic Chicken Salad


I would say a new yummy salad for a new year but we have been making this salad for a while now and it's a staple in our house!  I just am finally blogging it!  This chicken has to be one of my favorite grilled chicken recipes.  We have made it a million times and it comes out perfectly every time.  It is so flavorful, so easy to just throw on the grill and makes the perfect topping for a healthy salad, or pair it with some rice and grilled veggies or throw it on top of a loaded baked potato!  I can't praise this grilled chicken enough and when you throw it on top of a salad with avocado, black olives, tomatoes, and shallots with a champagne dressing, you have me hooked!  

Honey Mustard Pretzel Crusted Chicken


Chicken, good!  Honey mustard, good!  Pretzels, good! All things that are oh so delicious put together into one masterpiece of chicken.  The pretzels coat the chicken so it feels like you're eating fried chicken, but you're not! It's baked! And there is no better combo than mustard and pretzels and this combines them both!  Its juicy and packed full of flavor!

Balsamic Chicken Pasta with Spinach


I know I have said this before, but this possibly the easiest weeknight dinner there is!  It's practically "cheat" cooking since you buy the chicken already cooked!  Basically if you can boil water for pasta, you can make this.  And it comes together in just a few minutes so it's perfect for when you come home late from work and are STARVING! Haha 

Oven Roasted Chicken Quarters (super crispy skin!) in a White Wine Chicken Gravy


I am always looking for new ways to cook chicken.  I usually tend to gravitate to the boneless, skinless chicken breasts but I saw what was called a "grill pack" of chicken quarters at the grocery store and decided to give it a try.  It had 2 breasts with rib meat on the bone with the skin, and 3 legs/thighs on the bone with the skin in it.  Frankly it was just a massive amount of chicken that I had no business in trying to cook!  I ended up only cooking the 2 breast pieces and one leg piece (because that was all I could fit in the pan I was using).  This chicken was packed full of flavor, moist, had a delicious crispy skin (my favorite part) and also makes a white wine chicken gravy or sauce to pour over it (ok and to pour over the potatoes I had along with it).  

Guacamole Bacon Chicken "Burger"


I am not a huge fan of ground meat in general so I am always looking for a way to update my "burger" to something that doesn't use ground meat.  Behold: the Guacamole, Bacon Chicken "Burger".  Ok so it's more a sandwich than a burger because it uses a grilled chicken breast, but since it's Labor Day Weekend, a weekend full of BBQs, I'm just going to call it a burger anyway.  

Pesto Chicken Sandwich: Pesto Chicken with Tomatoes and Arugula


I am always looking for something delicious and (somewhat) healthy to make for lunch.  I am not really a sandwich kinda girl, I will usually go for a panini (with no cheese!) but I have always been really picky when it comes to sandwiches (you can ask my mom, she had to send me to school with a salad instead of a PB&J sandwich when I was kid).  I had never mad a pesto before so I was intrigued by it.  Well, this Pesto Chicken Sandwich pleased my picky palate and my hungry boyfriends!  It is a total win in my book, but try it for yourself and let me know what you think!

Smoked Honey BBQ Pulled Chicken Sliders, in the Crockpot!


Remember when we made Chicken Wings 3 Ways a few days ago?  Well we had a lot of the Smoked Honey BBQ sauce left so we made some pulled chicken sliders in the yummy BBQ sauce!  It was the perfect way to use up the extra sauce and since it was insanely hot this past week in San Diego, we made it in the crockpot so we didn't have to turn the oven on.  Trust me when I say, you will love this Smoked Honey BBQ Pulled Chicken Sliders!
