Pesto Chicken Sandwich


I am always looking for some ways to mix up what I make for B to take with him to work, and this Pesto Chicken Sandwich was definitely a show stopper!  It was pretty simple to make, you just throw all the pesto ingredients and the chicken into the food processor and voila! I added on some arugula because lets be honest, arugula makes everything better!  Some slices of mozzarella and tomato all piled onto a baguette and it made for one fancy sandwich!






[What you need]

2 large handfuls of fresh basil
4-5 cloves garlic
1/2 cup grated parmesan cheese
olive oil
salt and pepper to taste

cooked chicken, I used 1 package of the refrigerated "Just Chicken" from Trader Joes
mayo

arugula
tomato
mozzarella
sourdough baguette
mayo

[What to do]

In a food processor, add your basil, garlic, and parmesan cheese.  Pulse until everything is chopped and incorporated.  Then, while the food processor is going, drizzle in the olive oil until it is incorporated and forms into a paste.  Season with salt and pepper.  Add in your chicken and about 1/4 cup of mayo and pulse a few times to incorporate it all together, chopping up the chicken so it makes a spread.

Slice your baguette and put some mayo on it.  Then top with sliced mozzarella, tomato, arugula, and your pesto chicken mixture.  Enjoy!
