Spicy Chili Lime Chicken


It's summer time and that means we are grilling all the time!  Who are we kidding, we live in California and grill year round!  We made these spicy (and I mean SPICY) Chili Lime Chicken Skewers the other night and they were oh-so-delicious.  I am a fan of all things spicy and this marinade gave me a run for my money as far as spice goes.  But with that said, it was delicious! Just don't say I didn't warn you.









[What you need]

3 boneless skinless chicken breasts
1 jalapeno
4 limes
1 tablespoon crushed red pepper (more if you want even more of a kick! I think I added more)
2 teaspoons paprika
1/4 cup chopped fresh cilantro
salt and pepper
1/4 cup avocado oil or other high heat oil

[What to do]

Dice up your chicken breasts.  I did mine pretty small, I think next time I would make them a little bigger. Add them to a large plastic bag.  Finely mince the jalapeno and zest your limes and then juice them.  In a small bowl add your lime zest and juice, crushed red pepper, minced jalapeno, paprika, cilantro and salt and pepper.  Mix until well incorporated.

Pour into your bag with the chicken and shake to make sure it is all coated.  Then add in your avocado oil and shake again.  Marinate in the fridge for 3-4 hours.  Skewer the chicken and grill over high heat.  Mine took less than 10 minutes because they were cut so small but cook times will vary.  Make sure to cook to an internal temperature of 165 and then ENJOY!
