Chicken Fajita Lettuce Cups


If you haven't noticed, I am kinda on a lettuce cup kick lately.  I am totally loving all the different ways to make them and they are all so delicious and way healthier than using tortillas or something like that.  And they are so quick and easy to make, you can't beat a delicious dinner on the table in about 20 minutes flat.  My latest ones, Chicken Fajita Lettuce Cups!  I love me some mexican food but it is packed full of carbs, but with these chicken fajita lettuce cups you get all the flavor and deliciousness of mexican food but without the carbs!











[What you need]

2 chicken breasts
butter lettuce
1/2 yellow bell pepper
1/2 red bell pepper
1/2 onion
5-6 cloves garlic
1 spoonful mexican seasoning
1/4 cup chopped cilantro

Mexican Seasoning:
2 parts cumin
1 part dried cilantro
1 part garlic powder
1 part paprika
2 parts chili powder
1 part crushed red pepper


Toppings:
green onion
cheese
hot sauce
avocado
sour cream

[What to do]

Dice up your chicken breasts into bite size pieces.  Slice your onion and peppers into strips and chop up your garlic.  Add your veggies and drizzle with avocado oil and salt and pepper to taste.  Saute for 3-4 minutes.  Add in your chicken breasts and 1 heaping spoonful of your mexican seasoning.  Continue to cook for another 10-12 minutes until the chicken is cooked through and the peppers are soft.  Remove from heat and stir in cilantro.

Scoop some of the chicken fajitas into the butter lettuce cups.  Top with some chopped green onions, a sprinkle of cheese, some hot sauce or anything you like!  I am pretty fond of some guacamole myself!
