Asian Chicken Lettuce Cups


I have been trying to figure out healthy, quick weeknight dinners to make.  I have always been a fan of lettuce cups as a healthier alternative to things like tortillas.  I wanted to give these chicken cups a little asian flavor but without all the carbs and sugars typically found the sauces and dressings.


I searched pretty much all of the sauces, dressings, and marinades at my local Nob Hill searching for the one with the fewest carbs and sugars.  Enter: Organicville Miso Ginger Organic Vinaigrette.  The majority of the dressings I looked at had anywhere from 8g-18g sugars and carbs per 2 tablespoons with some even exceeding that!  The Organicville Miso Ginger has only 1g carbs and 1g sugars per 2 tablespoons of dressing.  The best part of it is, it is DELICIOUS!  These chicken lettuce cups will definitely be added into in the rotation!










[What you need]

2 boneless skinless chicken breasts
1/2 cup shredded carrots
1/2 cup chopped green onions
1/4 cup cilantro
butter lettuce
miso ginger dressing
sesame seeds
salt and pepper
2 tablespoons avocado oil (or other high heat oil)

[What to do]

Dice up your chicken into bite size pieces, about 1/2" - 1" cubed.  Add to a pan and turn on high heat.  Add in your avocado oil (or other high heat oil) and salt and pepper the chicken.  Saute for about 5-8 minutes until cooked through.  Add in your carrots and about 1/4 cup of the miso ginger dressing and continue cooking for another 2 minutes.  Stir in your chopped cilantro and cook for another minute.

Remove from heat and stir in half of the chopped green onion.  Add a spoonful of the chicken to butter lettuce cups and top with the remaining green onions and a sprinkle of sesame seeds.  Drizzle some more of the miso ginger dressing on top if desired.
