Pesto Chicken Sandwich: Pesto Chicken with Tomatoes and Arugula
I am always looking for something delicious and (somewhat) healthy to make for lunch. I am not really a sandwich kinda girl, I will usually go for a panini (with no cheese!) but I have always been really picky when it comes to sandwiches (you can ask my mom, she had to send me to school with a salad instead of a PB&J sandwich when I was kid). I had never mad a pesto before so I was intrigued by it. Well, this Pesto Chicken Sandwich pleased my picky palate and my hungry boyfriends! It is a total win in my book, but try it for yourself and let me know what you think!
[What you need]
2 big handfuls basil (don't you love how exact I am?)
4 cloves garlic
1/2 cup olive oil
2 tablespoons white balsamic vinegar
2/3 cup grated parmesan cheese
salt
pepper
1 package sliced and grilled chicken from Trader Joe's (or about 2 chicken breasts cooked and sliced)
1/3 cup lite mayonnaise
1 baguette cut into 2-3 pieces (however big you want your sandwiches)
1 large tomato, sliced
2 cups arugula
olive oil
[What to do]
Add your basil, garlic, and parmesan cheese to a food processor. Blend until incorporated. While the food processor is going, drizzle in your olive oil until it is the consistency you would like. Season it with salt and pepper.
Next add your sliced chicken to the pesto in the food processor and pulse a few times. Do this until it is chopped up and completely incorporated with the pesto. Then, pour it into a bowl and stir in the mayonnaise.
Slice your bread in half and drizzle with olive oil. Broil with cut side up until crispy. Next, build your sandwich. Add arugula, sliced tomato, and then your pesto-chicken mixture on top.
