I know I have said this before, but this possibly the easiest weeknight dinner there is! It's practically "cheat" cooking since you buy the chicken already cooked! Basically if you can boil water for pasta, you can make this. And it comes together in just a few minutes so it's perfect for when you come home late from work and are STARVING! Haha

Creamy California Pasta Salad
Ok, ok, ok, I know this is totally a summer recipe and Starbucks has already come out with their Pumpkin Spiced Latte which means its "fall" but here in Southern California we have a (surprisingly) hot week with temperatures being 90+ (unheard of in coastal San Diego). So with this heat wave I decided I can still make "summer" dinners even though it is September. And with that, I give you my Creamy California Pasta Salad. It's even better if you eat it on the beach! It has to be like the easiest dinner there is, and the best part is, you can make it early and then eat it whenever you want! And the leftovers the next day are just delish!
Spaghetti with Vegetarian Red Marinara Sauce
Every Italian has their own special way of making spaghetti sauce, my aunt makes it one way, my mom makes it another, and my grandma makes it another way. If you're anything like me, you like all of them! It's hard to turn down some good-old-homemade spaghetti with a red marinara sauce. My favorite way is to make it is pack it full with some veggies! Don't get me wrong, I love me a good meat sauce, but not being huge on ground meats in general, I decided to make mine sans meat. Try it for yourself and let me know how you like it! Oh and I feel I should mention, this recipe makes a TON of sauce, you can either make it for a crowd, or freeze the extra sauce and have it another night when you don't feel like cooking! Score, two nights of dinners in one!
Healthy Cauliflower Alfredo over Fettuccine with Spinach and Chicken
We have been seeing all of these recipes for Cauliflower "Alfredo" sauce all over Pinterest so we thought we would try it out for ourselves. There is no way cauliflower could have that creamy taste and texture of a traditional cream based alfredo sauce, right? WRONG! This exceeded our expectations for how incredibly amazing it turned out! You can eat an entire bowl of this Fettuccine with Cauliflower Alfredo and Spinach and Chicken and not feel the least bit guilty!
Cheesy Mac n Cheese
Who doesn't love some good old fashioned Cheesy Mac N Cheese! And this one is the Cheesiest! And it is baked which makes it just THAT much better and you get a crispy crust on the top that adds a little texture, too!
