Balsamic Chicken Pasta with Spinach


I know I have said this before, but this possibly the easiest weeknight dinner there is!  It's practically "cheat" cooking since you buy the chicken already cooked!  Basically if you can boil water for pasta, you can make this.  And it comes together in just a few minutes so it's perfect for when you come home late from work and are STARVING! Haha 









[What you Need]

Angel Hair pasta
1 container already cooked balsamic chicken from Trader Joes
3 loosely packed cups of spinach
Balsamic glaze (also from Trader Joes, can you tell I'm a lover of all things Trader Joes?)
4 cloves garlic, roughly chopped
Olive oil
Salt
Pepper

[What to do]

Boil your water and cook your pasta.  While that is cooking, heat up the chicken in the microwave according to the package directions and chop into pieces.  In a sauce pan, sautee the garlic for about 2-3 minutes over medium heat in olive oil and salt and pepper until it becomes fragrant.  Add in the spinach, stirring until the spinach wilts and is mixed in with the olive oil.

When the pasta is done cooking, toss it in a little olive oil to coat it so that it doesn't get all clumped together.  Then mix with the spinach and garlic.  Top with the chicken and drizzle with the balsamic glaze.  Enjoy!
