Honey Mustard Pretzel Crusted Chicken


Chicken, good!  Honey mustard, good!  Pretzels, good! All things that are oh so delicious put together into one masterpiece of chicken.  The pretzels coat the chicken so it feels like you're eating fried chicken, but you're not! It's baked! And there is no better combo than mustard and pretzels and this combines them both!  Its juicy and packed full of flavor!










[What you need]

2 boneless, skinless chicken breasts
2 big handfuls regular sized (not the mini) hard pretzels
1/2 cup honey mustard, more for drizzling/dipping (I used a honey mustard bbq sauce I got from Trader Joes that was oh-so-delicious)
cooking spray

[What to do]

Preheat your oven to 375.  Lightly spray a baking sheet with cooking spray and set aside.  Pound out your chicken breasts to about 3/4 inch think, this will make them cook faster.  Place them in a plastic bag and add in the honey mustard.  Let them marinate for about 15 minutes.

While the chicken is marinating, put your pretzels in a food processor and chop them up into tiny pieces.  If you don't have a food processor, you can put them in a bag and hit them with a large spoon or meat mallet.

Spread the pretzels out on a plate.  One at a time, carefully remove the chicken breast from the bag and put them in the pretzels, flipping them over to coat them completely.  Place them on the baking sheet and lightly coat the tops with cooking spray.

Bake in the oven for 20-25 minutes, flipping halfway through or until completely cooked through.  Slice and drizzle with some more honey mustard and enjoy!
