Chicken Caesar Lettuce Cups


I know, you guys are probably sick of all these lettuce cup recipes I have been posting but seriously, what could be better?  They are all super quick to make, healthy, delicious, and how much fun is it to eat your dinner with your hands?! haha (ok so maybe that's just me)

So these Chicken Caesar Lettuce Cups are basically just a chicken caesar salad, BUT they feel like more of a fancy meal when you eat them in the lettuce cup form.  Let's face it, yesterday was the first day of summer and it is already too hot out to do just about anything.  But I've got good news for you, you don't even have to turn on the oven to make these!  Or slave over the stove!  Do I have you hooked yet?  These are going to be a staple in our house this summer, especially if it is going to stay this hot!










{ WHAT YOU NEED }

Butter Lettuce
2 Chicken Breasts
Caesar Dressing (I searched for a low fat/low carb/low sugar one to make them healthier)
Grape Tomatos
1 Avocado
1/2 shredded Parmesan Cheese
Avocado oil, salt and pepper

{ WHAT TO DO}

Drizzle your chicken breasts with avocado oil and season with salt and pepper.  Throw those on a hot grill and cook for about 7-8 minutes per side.  Cooking times will vary depending on the the thickness of your chicken breasts, just make sure they are cooked through to a temp of 165.

Let cook and slice into bite size pieces.  In a bowl, mix together your chicken, parmesan cheese, sliced grape tomatoes and chopped avocado and mix to coat with your caesar dressing.

Fill up your butter lettuce cups with the mixture and top with a sprinkle of parmesan and some freshly ground pepper.  Dinner is served!
