Sweet and Spicy Ginger Wings


Oh of all things delicious!  We have been making wings at home for a while now and have always done them in the oven.  But these babies were cooked on the grill and I can confidently say we will never go back to cooking them any other way!  










[WHAT YOU NEED]

3 lbs party wings
1/2 cup honey
1/2 cup soy sauce
1/4 rice vinegar
2 tablespoons butter
3 chipotle peppers - These come in a little can and have a red chipotle sauce in them, and there will be way more than that in it, the more you use, the spicier it will be!
2 tablespoons minced fresh ginger
2 tablespoons chopped garlic

corn starch for thickening (if desired)
green onions and sesame seeds to top them with

olive oil
salt and pepper

[WHAT TO DO]

Rinse the wings in cold water and pat them dry with paper towels.  Toss them lightly in olive oil and salt and pepper.  Preheat your grill and grill them over medium heat until the skin is crispy, turning them so that all sides cook.

While the wings are cooking (or before you throw them on the grill, they really do not take that long) make your sauce.  Melt the butter in a sauce pan and add in your garlic and ginger.  Stir to coat and then add in honey, soy sauce, rice vinegar, and chipotle peppers.  Bring it to a boil and then turn it down to simmer for about 15 minutes, occasionally stirring.  It will thicken some at this point but I like the sauce a little thicker so it coats the wings better so at this point add some corn starched dissolved in water (you really don't need much).

When your wings are done, toss in the sauce, reserving some of the sauce to dip them in if you really like them saucy! Then top with chopped green onions and sesame seeds and enjoy!
