Mexican Chicken and Rice Soup


So growing up in San Diego I have had more than my fair share of delicious mexican food.  One of my favorites was this Mexican Chicken and Rice Soup from Jorge's Mexican Food in Encinitas.  Whenever it gets chilly I always crave it.  But now that we are living in the Bay Area, we can't exactly hop in the car to go get a bowl of it, so I went out to make my own.

Super Bowl Snacks: BBQ Chicken Pizza


No Super Bowl Party is complete without PIZZA!!  And this BBQ Chicken Pizza is sure to be a crowd pleaser.  It is what I like to call "cheat cooking" because I bought already cooked chicken, already made BBQ sauce and pre-made dough.  Which really just means this pizza is super easy to make but everyone will think you made it from scratch!

A HEALTHY take on a Taco Salad [Spinach, Arugula, and an Avocado Dressing!]


I don't know about you, but I am a sucker for those taco salads that they serve in the fried taco shell bowls.  The only problem is, there is nothing healthy about a giant deep fried taco shell, the ice burg lettuce the use to make the salads, and the calorie rich, creamy ranch dressing they smoother all over it.  Thats why we ventured out to try and give it a make over and make it a little bit better for you!  

We swapped the fried taco shell bowl for a baked one, ice burg lettuce for spinach and arugula, and that fattening ranch dressing for our homemade Avocado, Cilantro, Lime Dressing.
