Balsamic Bruschetta


I'm a lover of appetizers, especially when they are super easy to make!  This is another one of my "cheat" cooking appetizers because you actually start with a tomato bruschetta from Trader Joes!  If you haven't noticed yet, I'm addicted to anything and everything Trader Joes.  If you don't have one near you, I feel oh so very sorry.  I wouldn't know what to do without it!  Anyways, this one also uses that Balsamic Glaze from Trader Joes as well.  Its seriously so delicious and makes everything taste so much better!  I've tried reducing balsamic vinegar and making my own glaze and it never turns out as good as this one so now I just always buy it.  











[What you need]

1 container of bruschetta from Trader Joes
3 Roma tomatoes
1.5 cups loosely packed fresh basil
1 tablespoon balsamic vinegar
2 tablespoons olive oil
1 teaspoon cayenne pepper
1 tablespoon garlic (store-bought chopped in the jar is totally fine)
Balsamic glaze for drizzling
1 french bread baguette, sliced
salt and pepper to taste

[What to do]

Drain out the majority of the liquid from the store bought bruschetta and discard and then pour the bruschetta into a medium sized bowl.

Dice up your tomatoes, discarding the liquid and seeds, and add them into the bowl.  Slice up your basil and add it in too.  Then add in your garlic, olive oil, balsamic vinegar, salt, pepper, and cayenne pepper.  Mix it all together until throughly combined.

Spoon onto slices of bread and drizzle with the balsamic glaze. Enjoy!
