Crockpot Beef Stew over Mashed Potatoes


Colder weather is my favorite because you get to start making comfort food like beef stew and mashed potatoes!  As soon as it starts to get chilly outside I whip out the crockpot and make some slow cooked beef stew to pile over a plate of homemade mashed potatoes.  It is quite possibly one of my favorite dinners.  It virtually cooks itself, all you have to do is throw all the stew fixings in the crockpot in the morning and voila!  8 hours later you have an amazing stew to put over mashed potatoes.








[What you need]

1 package of stew meat
3 large carrots, chopped into big chunks
1 large onion, chopped into big chunks
6-7 cloves garlic, roughly chopped
1 teaspoon thyme
1 teaspoon rosemary
1 cups beef broth
1/4 cup flour
1/2 stick of butter
salt and pepper to taste
Your favorite mashed potatoes

[What to do]

Put everything for the stew in your crockpot.  Turn on low and cook for 6-8 hours until the beef is tender and about to fall apart.  If it isn't thick enough, you can thicken it with corn starch.  Serve over your favorite mashed potatoes!  It's like a really yummy chunky gravy and oh so delicious!
