The Perfect Cosmo for NYE!

We have been experimenting lately making different mixed drinks.  I have to say, this Cosmo is definitely one of my favorite!  Once you have the granita made, you can keep it in the freezer which makes making them a breeze and super simple!  These will sure to impress all your guests this NYE!

[What you need]

For the Cosmo:
4 frozen cubes of granita
2 oz vodka
1 oz Grand Marnier
1 oz freshly squeezed lime juice

For the Granita:
2 cups water
1 1/2 cups cranberries
3/4 cups sugar
1 teaspoon lime zest
1 teaspoon freshly squeezed lime juice

[What to do]

For the Cosmo:
Add 4 frozen cubes of the granita to a shaker.  Add in the vodka, grand marnier, and lime juice.  Shake until the granita cubes are melted and pour into a martini glass.  Garnish with a fresh cranberry.

For the Granita:
In a saucepan, add the water, sugar and cranberries.  While stirring, bring it to a simmer over medium heat.  Let it simmer until the cranberries start to pop.  When this happens, pour everything into a blender and puree.  Pour everything through a fine strainer into a bowl, leaving all the bigger pieces in the strainer (you can discard them).  Mix in your lime juice and lime zest.  Then pour everything into ice cube trays and freeze.  It's easiest once they are frozen, to pop them all out and keep them in a plastic bag in the freezer.  This makes making cosmos easier and takes up less room in the freezer!
