Spinach Artichoke Pastry Cups


I am always on the lookout for new easy appetizers to make.  Appetizers have to be my favorite food group, I have had made an entire meal out of just appetizers and I am not afraid to admit it!  This recipe is great because it's like two appetizers in one.  You can make a bunch of these pastry filled, cheesy, spinach artichoke cups, and then you still have spinach artichoke dip left over to serve with crackers!  It really is a win-win situation here.











[What you Need]

Cheesy Spinach Artichoke Dip
1 can biscuits (8 per can)

[What to do]

Preheat your oven to 350 and lightly spray a mini muffin pan with cooking spray.  Take the biscuits out of the can and divide each one into 2 so you have a total of 16 circles of pastry.  Put a pastry circle in the mini muffin pan and gently push it in so that it creates a cup.  Spoon the cheesy spinach dip into each cup and bake for about 12 minutes, or until the pastry is golden in color.  Carefully remove from the pan and let them cool slightly before serving, they will be hot!
