Curry Roasted Carrots


Roasted carrots are probably one of my favorite roasted vegetables.  Well, just about any roasted veggies are good, you can't go wrong oven roasting them and it couldn't be any easier!  I love how when you roast carrots in the oven they become sweet and they turn out oh-so-delicious.  I have never been a huge curry fan, but tossing carrots in in curry powder and roasting them has become my go to veggie for weekend dinners.  Quick, easy, sweet and savory at the same time!








[What you need]

8-10 carrots
1 tablespoon curry powder
salt and pepper to taste
olive oil

[What to do]

Preheat your oven to 400.  Cut the stems of the carrots down to 2 inches long.  Put them in a ziploc bag and add your curry powder and season with salt and pepper.  Drizzle with olive oil to coat.  Toss so that all the carrots are coated in seasoning and olive oil.

Lightly spray a baking sheet with cooking spray and lay your seasoned carrots on the pan.  Bake for about 15 minutes, or until tender (cooking time really depends on the widths of your carrots).  Enjoy your oh-so-delicious carrots!
