Garlic Parmesan Spread


I am first to admit it, I am a lover of all things garlic!  And I have to admit, this whole living so close to Gilroy CA (basically the garlic capital of the world) we have some amazing fresh garlic!  I'm talking like giant bulbs of garlic that almost look like elephant garlic (which on that note, has anyone tried cooking or roasting elephant garlic? I'm so curious about it).  This spread is great to have on hand, it is delicious on toast, and put it on some bread and pop it under the broiler for a few minutes and you have instead homemade garlic bread!










[What you need]

2 sticks butter, softened
5-6 cloves garlic (or more if you are a garlic lover!)
1/2 cup grated parmesan cheese
2 teaspoons dried thyme
1 teaspoon dried rosemary
salt and pepper to taste (doesn't need much)

[What to do]

Add the garlic into a food processor and pulse it some to chop it.  Then add the rest of the ingredients and pulse until combined.  Store in an air-tight container in the fridge.

Add to toast or onto bread and broil for a few minutes for garlic bread.
