Mini Caesar Salad Cup Appetizer - With Bacon, Avocado, and Crispy Onion Strings!

I don't think I have ever met a Caesar Salad I didn't like.  Well, except maybe ones that have the whole anchovies on them, I can't do that and I have to pick them off.  One of my favorite things is fun takes on the caesar salad, one of which is adding avocado, bacon bits, and crispy onion strings to it!  Because well add any one of those things to just about anything and it makes it soooo much better, so why not add all three!  These little 2-bite caesar salad cups are perfect for a cocktail party.  There are no utensils required!  It's a salad you can eat with you hands, so well, everyone is going to love that!

[What you need]

lettuce (I prefer the spring mix)
bacon bits
1 avocado
crispy onion strings
caesar dressing
wonton wrappers (make sure they are the small wonton wrappers and not the larger egg roll wrappers.  These should be about the size of a ravioli)

[What to do]

Preheat your oven to 350.  Spray the cups of a regular sized cupcake pan with a little bit of cooking spray.  Line each cup with a wonton wrapper, forming it into a mini bowl.   Lightly spray the tops with cooking oil and bake in the oven for about 5 minutes, or until they are a golden brown color.

Add your lettuce to a mixing bowl.  Using a pizza cutter, chop it so that it is in tiny pieces instead of leaves.  I have found that a pizza cutter in a bowl is easer than trying to do it with a knife on a cutting board.  Then mix with your dressing and toss so that it is all coated.

Your newly made wonton cups should slide right out of the pan.  Put them on a plate or tray for assembly.  Add your lettuce/dressing mixture to each cup.  Then top with a few pieces of chopped avocado, bacon bits, and crispy onion strings.  Serve and enjoy!

  1. This looks so delicious. I never heard before a baked salad. Its good but not perfect for those who are on dieting because purpose of the salad is to cut the calories.
