Garlic Parmesan Potato Stacks


I really don't think I can say it enough, garlic and potatoes (and any combination that involves them both) are by far my favorite foods.  These potato stacks are the perfect combination of comfort food and fancy.  They make the perfect add on to your brunch or even with dinner!  I topped mine with a dash of ranch dressing because ranch makes everything better in my book.  But B doused his in ketchup and absolutely loved them! 









[What you need]

2 russet potatoes
5-6 cloves garlic, minced
1/4 cup grated parmesan, more for topping
2 teaspoons dried thyme
1 tablespoon dried rosemary
1 tablespoon garlic powder
olive oil
salt and pepper to taste

[What to do]

Using a mandolin slicer, slice your potatoes into a bowl.  Add in your minced garlic, grated parmesan, thyme, rosemary, garlic powder, salt and pepper.  Drizzle with olive oil to lightly coat it all.  Mix it all up to get the seasonings in between all the slices of the potatoes.

Preheat the oven to 400.  Spray a cupcake pan with cooking spray.  Stack the potato mixture into each cup, filling them up.  Top with a little sprinkle of parmesan.  Bake for 15-20 minutes or until they get golden and crispy.  They should pop right out of the pan leaving the outsides crispy and the insides of the stacks fluffy.  Dip in some ranch, ketchup or even top with a little tapotillo! Enjoy!
