Lemon Garlic Baked Fries


I am always looking for a a new fun take on my favorite food (yes, french fries, well just about any form of potatoes).  These fries are baked in the oven instead of friend so the are slightly better for you (or at least that is what I tell myself!) and then tossed in a delicious lemon garlic combination.  It is like garlic fries, stepped up a notch with lemon and let me tell you, I think I want all fries to come in this form!







[What you need]

2 large russet potatoes
2 lemons
5-6 cloves garlic (or more, I have never one to go light on the garlic!)
1  cup loosely packed parsley leaves
1 tablespoon olive oil, more to saute the garlic
salt and pepper to taste

[What to do]

Preheat your oven to 450 and wash your potatoes and cut into slices like french fries. Toss in olive oil and salt and a pepper to taste.  Then lightly spray a baking sheet with cooking spray.  Put your fries in one layer on the pan.

Bake for 15-20 minutes or until the bottoms of the fries are a golden color.  Then turn the oven off and put them under the broiler to get the tops crispy too.  This can go pretty quickly so make sure to watch them!

While the potatoes are cooking, peel and chop your garlic.  Saute it in a small pan with olive oil and salt and pepper over medium-high heat until tender, about 4 minutes.  Add in the zest from one lemon and juice from 2 lemons.  When the fries are done cooking in the oven, place them in a bowl and toss with the sauteed garlic/lemon mixture.  Sprinkle on your chopped parsley and enjoy!
