Oven Roasted Red Potatoes


Words cannot describe how much I LOVE these potatoes!  I mean I am a potato-aholic, I haven't met a potato I don't like!  But these are so low maintenance to make and so incredibly flavorful thats it's hard not to make these every night!  I love me some garlic, especially when it cooks in the oven for a long time and becomes all sweet and delicious, and this potato recipe combines but garlic and potatoes!  You can't beat that! These are like the perfect side dish to like um EVERYTHING!










[What you need]

5 large red potatoes
6 large cloves of garlic
2 tablespoons chopped rosemary
2 tablespoons butter
olive oil
salt
pepper

[What to do]

First, preheat your oven to 400.  Next wash your potatoes and cut them up into chunks.  Put them into a baking casserole dish (a 9x9 inch pan works great).  Chop your garlic and rosemary and sprinkle them on top.  Next season with freshly ground salt and better.  Drizzle on some olive oil and mix the potatoes up a little as to coat everything.  Next, cut the butter into small chunks and distribute them evenly over the potatoes.

Cover them will foil about bake for about 40 minutes.  Then take the foil off and cook for another 20 minutes.  They are done when they are tender when poked with a fork.  You can then put them under the broiler for a few minutes to give the top ones a crispy crust which I highly suggest because it makes them oh-so-yummy!
