Ok, so I am first to admit, I am a fan of the "cheat" cooking. I made these empanadas with pre-made biscuit dough (you know, the pop and bake ones?) and I cooked the pork in the crockpot so these were totally and completely way too easy to make. I mean, who wouldn't be impressed with pork empanadas? And when you have very little work on your part, they are still just as delicious! I like to put a little hot sauce on top of them and then dip them in some guacamole.
[What you need]
Slow Cooker Pork Carnitas
2 cans biscuits
toppings of your choice (I'm partial to hot sauce and guacamole!)
[What to do]
Preheat oven to 400. Split each biscuit into 2 so you have to circles. Fill one side with about 2 tablespoons of pork carnitas and top with the other half, sealing the edges closed. Continue this with each biscuit. Then bake for about 10-14 minutes until golden brown.
Top with your favorite toppings and enjoy!
