TAMALE Tuesday! Pork Carnitas Tamales


Screw Taco Tuesday, it's TAMALE Tuesday in our house!  I don't think it is any secret that we are huge Mexican food fans in our house.  Every Christmas Eve my mom would go get these delicious tamales from a little old Mexican lady who made them in her kitchen and I have never found any tamales in my life that have even come close to the flavor that those had.

Pork Carnitas Street Tacos


I am Emma and I LOVE tacos!! I seriously can't get enough of tacos, they are so easy!  All you need is a delicious meat and then all you have to do is throw it in a tortilla, top it with some hot sauce and some onion and cilantro and call it good!  And you cook these carnitas in the crockpot so it really cooks itself!  I mean, why wouldn't you make them?!

Pork Carnitas Empanadas


Ok, so I am first to admit, I am a fan of the "cheat" cooking.  I made these empanadas with pre-made biscuit dough (you know, the pop and bake ones?) and I cooked the pork in the crockpot so these were totally and completely way too easy to make.  I mean, who wouldn't be impressed with pork empanadas?  And when you have very little work on your part, they are still just as delicious!  I like to put a little hot sauce on top of them and then dip them in some guacamole.

Slow Cooker Pork Carnitas


As I am sure you are all well aware of by now, I am a lover of the crockpot!  And once again, it hasn't failed me.  These slow cooked pork carnitas were a first for me, I've done bbq pulled pork a few times but this was my first try with carnitas.  The flavor was oh-so-delicious, and it was fairly simple to make.  Only a little bit of prep is required and then the crockpot does all the magic.  It does take a long time to cook, I had a pretty big pork butt (4.5 lbs) so it took almost 12 hours to cook which required I set an alarm for 5am to get up to turn it on.  But if you prep it and marinate it the night before, it was easy to just dump it all in the crockpot and go back to sleep!

I think it's safe to say I'm a lover of just about anything made in the crockpot.  And these sweet and smokey pulled pork biscuit sliders definitely don't disappoint!  They are the perfect combination of smokey BBQ and sweet delicious pulled pork!  And the best part, you pile on this deliciousness onto a biscuit!!  It doesn't get any better than that! 

Sweet and Spicy Ginger Pork Tenderloin in the Crockpot!


I think I should start out by saying that I am not a huge pork tenderloin fan, but cook it in the crockpot and I'll devour it!  I have done it in a brown sugar balsamic sort of mixture before but this time I wanted to try something new.  I have this delicious sweet and spicy ginger sauce that I have put on wings before so I thought I would give it a try on the pork tenderloin to give it a little extra kick.  And boy was it delicious!
