All summer long we have been seeing all of these amazing looking lobster rolls online and on Instagram, so we thought, "ok we can totally make those!". Living in southern California we don't have access to those amazing New England Lobster Rolls. We looked all over the bay area to find some comparable ones with no success so it was off to the kitchen we went! These were definitely on the "cheat cooking" side of things, in that we bought the frozen, already cooked, lobster pieces from Trader Joe's to make them but they turned out amazing! We have only high praises for there and if you are living on the west coast without access to those oh-so-delicious east coast lobster rolls, THESE are your solution!
