balsamic chicken and spinach flatbread

Looking for that perfect appetizer that everyone will be talking about the next day for your dinner party? Our Balsamic Chicken and Spinach Flatbread is sure to do the trick! The Darling Life team is going gaga over this.  With olives, chicken, spinach, parmesan cheese, and a balsamic glaze, how could you go wrong?














[What you need]

balsamic chicken (already cooked from trader joes)
pizza dough (we are particularly fond of the one from Trader Joe's)
1 bag of pre-washed spinach
1 can sliced olives
1 cup shredded parmesan cheese
balsamic glaze***
olive oil (for brushing)
flour (to use while pulling out the dough)
salt to taste

***now we have tried to reduce down balsamic vinegar and make our own glaze and no matter how many times we do it, it never thickens up or tastes as good as the one you can buy from Trader Joe's!  Its in the section with the oils and vinegars and it is the most delicious thing you have ever tasted.  You can drizzle it on just about anything and it makes it better.

[What to do]

Let the pizza dough come to room temperature, this makes pulling it out waaaaay easier so don't skip this step!  Then spray a baking sheet with cooking spray and then lightly sprinkle it with flour.  Coat your hands in flour and then pick up the dough, the less you play with it, the more forgiving and nice it will be.  Stretch it out to about the size of the pan.

Put the parmesan cheese on top of the dough and brush the edges with olive oil (this helps the dough crisp up).  Bake in the oven at 400 until the cheese is melted and the crust is a golden color.

While the dough is in the oven, heat up the chicken according to the packaging.  For best results cook it about 2-3 minutes in the microwave and then cut it up into piece and throw it in for another minute.

For the spinach, start with a large pot with a lid.  Turn the heat on medium-high and add a little olive oil to the bottom of the pot.  Pour in the bag of spinach (or however much will fit) with a dash of salt.  Put the lid on and let it steam up a little bit.  Let it sit until it wilts down, stirring occasionally.  This process goes pretty fast, so watch it closely.  When its wilted down, remove it from the heat.

When the dough comes out of the oven all golden and delicious with the parmesan cheese all melted, toss on the spinach, olives and chicken on top of it.  Then drizzle on the balsamic glaze and presto! You have yourself a delicious balsamic chicken and spinach flat bread.  You can share it with someone if you're nice, or just enjoy it all for yourself (no one will judge you if you do, it's pretty delicious).
