Buffalo Chicken Lettuce Cups


Well I am back at it again! On that lettuce cup kick that is.  My latest version?  Buffalo Chicken Lettuce Cups!  I have always had a thing for buffalo chicken so it was only natural that I come up with a healthier way to eat it (i.e. not crispy chicken wings slathered in sauce).  I feel like you can't go wrong with avocado, ranch, tomato and buffalo chicken.














[What you need]

2 chicken breasts
1/4 cup buffalo sauce ( more if you like it saucy)
avocado
tomato
light ranch dressing
butter lettuce
avocado oil (or other high heat oil)
salt and pepper

[What to do]

Chop your chicken into bite sized pieces.  Cook on high heat in a drizzle of avocado oil and salt and pepper for about 5 minutes.  Cook times will vary depending on how big you cut your chicken.  Add your buffalo sauce and cook chicken for another 2-3 minutes in the sauce.

Fill your butter lettuce cups with chicken, chopped tomato, avocado and drizzle with light ranch dressing.  Then stuff your face because you will devour them!
