Lobster Rolls


All summer long we have been seeing all of these amazing looking lobster rolls online and on Instagram, so we thought, "ok we can totally make those!".  Living in southern California we don't have access to those amazing New England Lobster Rolls.  We looked all over the bay area to find some comparable ones with no success so it was off to the kitchen we went!  These were definitely on the "cheat cooking" side of things, in that we bought the frozen, already cooked, lobster pieces from Trader Joe's to make them but they turned out amazing!  We have only high praises for there and if you are living on the west coast without access to those oh-so-delicious east coast lobster rolls, THESE are your solution!







[What you need]

1 bag Trader Joes Lobster Pieces (found in the frozen section)
1/2 cup mayo
3/4 cups chopped celery
1/4 cup chopped green onion
1 tbsp freshly squeezed lemon juice
1 teaspoon paprika
2 teaspoons cajun seasoning
salt and pepper to taste
sandwich rolls
butter for toasting the rolls

(Makes 3 sandwiches)

[What to do]

Defrost your lobster pieces.  In a medium sized bowl, mix your lobster, mayo, celery, green onion, lemon juice, cajun season, paprika and salt to pepper to taste.  Place in the fridge to let it all marinate together.  

In the mean time, slice your sandwich rolls in half.  In a frying pan over medium-high heat, melt 2 tablespoons of butter.  When it is melted, place your rolls, cut side down, and toast until golden brown.  Repeat for the rest of your rolls.  Stuff them full with your lobster mixture and enjoy immediately!
