Sriracha BBQ Chicken Skewers with Bacon and Onion


Grilling is one of our favorite things.  And we just recently got a grill since we moved up to the Bay Area so naturally chicken skewers were on the top of our list of first things to grill!.  As you know I am a fan of the easy cooking and this recipe is definitely one of them.  Trader Joes has this Roasted Garlic Sriracha BBQ sauce that we LOVE.  We marinated the chicken in it (and also added some extra Sriracha for that extra little kick!) and it turned out just oh-so-delicious








[What you need]

1 lb chicken breast (all of that chicken was literally 1 chicken breast for us!  It was HUGE)
1 onion, chopped into large chunks
3/4 pound thick cut bacon
Trader Joes Roasted Garlic Sriracha BBQ Sauce
Sriracha (For that extra little kick of flavor!)

[What to do]

Cut your chicken into chunks of equal size.  Chop up your onion and bacon into similarly sized pieces.  Marinate your chicken in the BBQ sauce and some extra added Sriracha in a plastic bag for about 6 hours, or overnight (if you think that far ahead, I usually just do it the morning of because thats the best I can do!).

Before grilling, Skewer your chicken pieces, bacon, and onion onto the skewers.  I did chicken, onion, bacon, onion chicken and so forth.  Doing a few pieces of onion each time and 2-3 slices of bacon each time.

Grill over medium heat for 15-20 minutes covered, turning the skewers half way through until the chicken pieces are cooked through at at least 165 degrees.

Take everything off the skewers into a bowl and enjoy!  The mix of chicken, bacon, and onion is one of my favorite because frankly, you can't beat it!  This is definitely a staple in our house in the summer, and in the winter on those evenings when we decide the cold weather is worth the deliciousness!
